🌿What Exactly Is Spirulina?

Although commonly described as a blue-green algae, spirulina is actually a type of cyanobacterium. Arthrospira platensis grows as microscopic, spiral-shaped filaments and uses photosynthesis to convert light into energy.

Its extraordinary deep blue-green colour comes primarily from two naturally occurring pigments: green chlorophyll and blue phycocyanin. Together, they give spirulina its instantly recognisable appearance.

🌿What Is Phycocyanin?

Phycocyanin is one of the most distinctive natural components of spirulina. It is a blue, water-soluble pigment involved in photosynthesis and is responsible for the remarkable blue tones found within the intensely green powder.

This spirulina contains 17,000 mg of phycocyanin per 100 g, equivalent to 850 mg in a 5 g serving.

Phycocyanin content is an interesting characteristic when comparing spirulina powders, as the amount can vary between products depending on the raw material and processing.

A little history

Spirulina has a surprisingly long history as a food. Long before it became the familiar green powder found in modern kitchens, naturally occurring spirulina was harvested from alkaline lakes and valued as a concentrated source of nourishment.

One of the best-known historical accounts comes from 16th-century Mexico, where the Aztecs collected a blue-green material called tecuitlatl from Lake Texcoco. It was dried into cakes and sold as food in local markets. Historical descriptions suggest that this was made from Arthrospira, the same genus associated with spirulina today.

A similar tradition developed around Lake Chad in Central Africa. Communities around the lake have long harvested naturally occurring Arthrospira from the water. It is traditionally dried into thin cakes known as dihé, which can be crumbled into sauces and other foods.

Spirulina attracted renewed scientific and nutritional interest during the 20th century, when researchers began examining its unusually concentrated nutritional composition and traditional use around Lake Chad. Cultivation subsequently expanded beyond natural lakes into controlled growing systems.

Today, spirulina is cultivated around the world and has travelled a remarkable path from traditional lake harvests in Africa and the Americas to becoming one of the most recognisable green superfoods of modern times.
